Butternut squash, also known as peanut squash , is a vegetable
we begin harvesting in summer, just when it reaches its peak ripeness.
At Freskísimo, we grow it organically, without pesticides or chemicals,
respecting the natural rhythms of the countryside. It’s easy to recognize by its elongated shape,
thin skin, and orange flesh. Although it’s harvested in summer, it keeps very well
for weeks, so it remains present in kitchens throughout the fall and even
winter. Perhaps for this reason, and because of the types of dishes it can be prepared, many people
identify it as a typical vegetable of the cold months.

     

A light, nutritious and very complete ingredient

One of the most notable aspects of this pumpkin is its high water content:
over 96% of its composition. This makes it a very hydrating and easy-to
-digest food. Its low calorie content, combined with the fiber it naturally contains, makes it
a very attractive option for those seeking a healthy and
balanced diet.

Nutritionally, it is especially rich in vitamin A (in the form of beta-carotene), which
contributes to the health of the skin, eyesight, and immune system. It also contains
vitamin C, which helps strengthen defenses and improve iron absorption. Furthermore,
its pulp concentrates minerals such as potassium, magnesium, and phosphorus, which contribute to the
functioning of the nervous system, bone health, and blood pressure regulation.
The fact that it is an organic product grown without chemicals is also an
added value: it is safer for those who consume it and more respectful of the environment.

A pumpkin that adapts to everything

          

Peanut squash has a mild flavor and a creamy texture that pairs well with
both sweet and savory ingredients. It can be baked, boiled, sautéed, in
soups, mashed potatoes, cakes, or savory dishes like quiches or empanadas. It’s hard
to tire of because it adapts to many cooking styles and produces excellent results
even with very simple recipes.
Below, we share a recipe for organic pumpkin soup with ginger and curry:
a comforting and tasty combination, ideal for cool days.

Recipe: Pumpkin and peanut cream with ginger and curry

A comforting and aromatic cream, ideal for cool days, with the warm touch of curry and the freshness of ginger.

Ingredients (for 4 people):

  1 organic peanut pumpkin (approx. 1 kg)

1 leek

1 piece of fresh ginger (about 2-3 cm)

1 teaspoon mild curry

1/2 teaspoon turmeric (optional)

600 ml of vegetable broth

200 ml coconut milk (optional, gives creaminess)

Extra virgin olive oil

Salt and pepper to taste

Toppings: pumpkin seeds, fresh chives, natural or vegetable yogurt (optional)

Preparation:

Peel the pumpkin, remove the seeds, and dice it into medium pieces. Clean the leek and cut it into thin slices.
Peel the ginger and grate it or chop it very finely.
In a large pot, heat a couple of tablespoons of olive oil and sauté the leek for a few minutes until tender. Add the grated ginger, curry powder, and turmeric, and cook for a couple of minutes, stirring to release the spices’ aroma.

Add the pumpkin pieces and stir well. Pour in the hot broth and simmer over medium heat for about 25 minutes, or until the pumpkin is tender.

Remove from heat and blend until smooth. If desired, add coconut milk for a silkier texture and reheat for a few minutes. Season with salt and pepper.

Serve hot and garnish with toasted seeds, chopped chives, or a dollop of yogurt if you like. A nutritious and flavorful delight!
